Love baking?Love baking?One thing that we have noticed over the past few months is an increase in the sales of our Baking Mixes. It seems that people are doing more home baking, which is fantastic! I love to bake, which is one of the reasons I started a bakery. Because of this increase in orders for Baking Mixes we decided that we should make some more available to make it even easier for the Gluten Free home-baker.
We still have our All Purpose Flour Mix, which is just that - all purpose. It is great for making cakes, biscuits, slices, scones, pikelets, fritters. We have many of our local Coeliacs bringing in their flour buckets for us to fill with this mix because it is just so versatile and you can bake pretty much anything except bread with it. It is easy to turn a 'normal' baking recipe into a gluten free one by simply substituting the 'normal' flour for our All Purpose Flour Mix, cup for cup. Though we have found, and also through feedback from customers, that the substitution is best for recipes up to 2 cups of flour. Over 2 cups the texture can go a bit funny.
For bread making (by hand or in a bread maker) we have two options: 1. Buckwheat Bread Mix - this is great for a light 'brown' bread style. The organic buckwheat and brown rice flours give a bit more flavour, a slightly nutty character to this mix. It is also great for making pancakes. I also use it for making Corn Fritters for a quick and easy lunch or dinner option. 2. White Rice Bread Mix- if you prefer a more traditional 'white' bread then this is the mix for you. Pikelets made with this mix are a real treat, just like Nana used to make...with lashings of homemade jam and fresh whipped cream -magic!
Muffins are made easy with our range of sweet and savoury Muffin Mixes: 1. Chocolate Treat - for a rich chocolate treat. To really up the chocolate hit I like to use blackcurrant juice & vanilla essence (1tsp) as the 'liquid' portion and throw in a generous handful of chocolate chips. It's a wicked treat eating them still warm from oven while the choc chips are still melted. 2. Sweet 'n' Spicy - this makes the most delicious blueberry muffins. At this time of the year it is the perfect base for Feijoa Muffins. 3. Savoury Herb - for those that prefer a savoury treat over sweet then this is a great base. By adding things like cheese and onion, maybe a little bacon, or some sundried tomatoes and feta you can have a delicious hot lunch treat in about 30 minutes. Also great for in the lunchbox.
We are fielding more and more phone calls about self-raising flour, on whether we have one or whether the All Purpose Flour Mix can be used. It can, if you add the right amounts of baking powder & baking soda. Using the base mix of our Muffin Mixes, which we know has the proportions of the baking soda & our 'homemade' baking powder, with a little guar gum, are just right to get good raising, we now have available a Self-Raising Flour Mix. It is a perfect substitute for 'normal' self-raising flour.
We use all sorts of different flours in our products. Different flours give different properties to something when it is baked as well as adding a variety of flavours. All our products use a mix of flours to try to get taste and texture as 'normal' as possible. Sometimes, however, it is handy to have a plain, single flour for a recipe. With that in mind we are now offering a small range of flours, as well as our baking powder and guar gum, for sale.
