Muffin Mixes

Chocolate Treat – a chocolate muffin mix just waiting for the addition of chocolate chips or frozen berries or grated orange rind.

Sweet ‘n’ Spicy – this muffin mix has a delicate mix of cinnamon and mixed spices. It is great for Blueberry muffins or add chopped apple, pear or banana or mix through dried fruit.

Savoury Herb – Great for a quick easy picnic option, or to pop in the lunch box. Just add bacon, cheese, onion or leftover cooked vegetables.

Cooking Instructions:

For 1 cup of muffin mix use 1 egg, 1 tablespoon oil, ¼ cup of water (or milk, juice or yoghurt). Place muffin mix into a bowl. In another bowl mix together the egg, oil and water. Add the liquid mix to the muffin mix, stir gently until the ingredients are just combined. Three-quarter fill greased muffin tins, bake at 180°C for 15-20 minutes or until the muffins spring back when lightly touched. 1 cup of muffin mix makes 4 muffins. Each pack of Muffin Mix contains approximately 3 cups of mix and makes up to 12 muffins. If using the whole packet please remember to alter the liquid ingredients accordingly. Once made, the muffins do freeze very well for 2-3 months. To serve, take the muffin from the freezer and heat in the microwave for 20-30 seconds.

Following are some recipe ideas for each of the muffin mix flavours, using 1 cup of muffin mix and following the cooking instructions above.

Chocolate and Raspberry Muffins

Using Chocolate Treat Muffin Mix. For a truly decadent, easy dessert treat, follow the cooking instructions to make up the muffin mix, then carefully stir in ¼ cup of fresh or frozen raspberries, ¾ fill greased muffin tin with mix and press a piece of dark chocolate into the top of each muffin. Bake as per cooking instructions. Serve warm with ice cream and drizzled with raspberry or chocolate sauce (or both).

Blueberry Muffins

Using Sweet ‘n’ Spicy Muffin Mix. Use apple juice as the liquid for a little extra flavour. Add ¼ cup of frozen blueberries just before filling the muffin tins, very gently stir the blueberries in (if you over mix the colour will come out of the blueberries and you will end up with BLUE muffins).

Pumpkin and Feta Muffins

Using Savoury Herb Muffin Mix. Add ½ teaspoon of ground cumin to the dry ingredients. Make up mix as per Cooking Instructions. Add ¼ cup of grated pumpkin and ¼ cup of chopped feta, and stir gently into the mix. Three-quarters full greased muffin pans with mix and press a piece of feta into the top of each muffin.
